Meet the Owners

Jeremiah Schenzel is a formally trained chef turned bartender and bar manager. Extensive knowledge of culinary flavors and familiarity with an array of cuisines shape chef Schenzel’s approach to cooking and making drinks.
Prior to Charleston, Jeremiah Schenzel worked as an opening kitchen member at Bergamot Restaurant in Sommerville, MA. and development chef of the Clover Food Company. Experience opening new restaurants instilled a strong sense of confidence within chef Schenzel, providing a foundation for him to become an opening member of The Macintosh Kitchen team where he trained under James Beard Nominated chef Jeremiah Bacon. In 2013 Jeremiah became the general Manager of The Cocktail Club where he honed his skills on the management and bar side of the restaurant industry. These skills readied him to open Bar Mash in the fall of 2015 in which is also managed and assisted in creative development alongside The Cocktail Club. In 2016 Jeremiah Schenzel took the full time position of Beverage Director of The Indigo Road-overseeing 14 beverage and bar programs across 4 metropolitan areas.

Nicholas Dowling brings over 15 years of restaurant experience to the table. A graduate of Johnson & Wales University, he has worked among some of the best chefs in America. His experience is diverse, having worked every position from dishwasher to line cook all the way to Front of House manager and most recently even expanding out to a producer role as Head Distiller for one of America’s top young craft distilleries. Before taking on his role as a distiller, Nick worked at a number of restaurants. Most recently working at The Macintosh, where he and Jeremiah first met, working for James Beard Nominated chef Jeremiah Bacon. Before arriving in Charleston, Nicholas helped run minibar by Jose Andres and was a part of the team when chef Jose Andres won James Beard’s Outstanding Chef 2011. He also ran Cafe Atlantico & open and closed a year long pop-up coinciding with the National Archives, America Eats, in Washington, D.C.-also for
Jose Andres. Before that, he worked side by side with brewers running a DC area brew pub and helped organize and run the food & beverage portion for the 2008 Whitewater Canoe and Kayak Olympic time trials at the U.S. National Whitewater Center in Charlotte, NC. Here he also ran the park’s restaurant and grab-n-go.
